Light, simple and healthy while looking amazing, this chicken porcupine plate is quick to prepare.

Chicken mince – 250 gm
Garlic – 1 tbsp, chopped
Carrots – 3 tbsp, finely chopped
Spring onions – 3 tbsp, finely chopped
Ginger – 1 tbsp, finely chopped
Soya sauce – 1 tbsp
Oyster sauce – 1 tbsp
Sesame oil – 1 tsp
Pepper powder – 1 tsp
Rice – 1⁄2 cup (small, thin grain)
Oil for greasing
Salt to taste
Step by step
Wash and soak the rice for 2 hours.
Drain the water and keep aside.
Place the chicken mince in a bowl.
Mix all the ingredients well and divide it into equal-sized balls.
Roll these balls in the soaked raw rice and carefully place these small porcupines on a greased plate.
Get the steamer ready and steam these on high heat for 15 minutes.
Remove and serve these cute chicken porcupines with soy sauce on the side.
Granita of Grape Juice (spice infused)
Black Grapes – 400 gms
Lemon – 2 nos
Star Anise – tiny little piece
Cinnamon – Tiny little piece
Nutmeg – less than a pinch
Mint leaves – handful
Sugar – to taste
Step by step
Mix all the ingredients and blend it.
Remove and place in a container.
Freeze till it is hard and frozen.
Now with a fork, scrape the iced juice and collect in a glass.
