Vegetarian rice paper rolls with a peanut dipping sauce

Easy to make and filled with vegetables, this vegetarian rice paper rolls with a peanut dipping sauce recipe is packed with vitamins and taste delicious!

Here's Karen, also known as Secret Squirrel, favourite recipe for the vegetarian rice paper rolls with their peanut dipping sauce.

Ingredients

Rice Paper Rolls
1 cup cooked rice vermicelli

1 carrot
1 cucumber
1 red capsicum
1 mango
Lettuce leaves (romaine or butter lettuce)

Coriander
Mint
Fried onions

Rice paper sheets


Peanut Dipping Sauce
¼ cup crunchy peanut butter

1 tbsp hoisin sauce
2 tsp soy sauce
2 tbsp boiling water

Garnish: sesame seeds

Step by step

To prepare the rice paper wrappers: Pour warm water into a large bowl. Working with one at a time, dip the rice paper wrapper into the warm water for 15-20 seconds. Immediately remove from the water and place flat onto a plate.

Fill the rolls with a little bit of everything.

Roll very tightly. To do so, gently pull up the bottom of the roll and roll over the filling. Then, roll and use your hands to tuck the filling in as you go.

Peanut Dipping Sauce

Whisk everything in a small bowl and serve with the rice paper rolls
