In answer to your questions, yes you can connect a second HDMI using an adapter, however it's not always guaranteed to work completely as frequency and resolution may decrease depending on the type of conversion. You cannot connect to a wired internet connection using a LAN adapter to USB-C as it is only dedicated to transmit audio and video signals, and no you cannot output sound through a USB-C adapter/converter.
