Creamy Veg Soup & Crispbread

Sweet, roasted summer veg soup with crisp, golden carraway crackers on the side.

Carraway crispbread balances this sweet, creamy soup with nutty flavors and subtle hints of anise and black pepper.

Ingredients

· 1.5kg mixed root vegetables such as carrots,
  parsnips, swede and turnips
· 1 tbsp honey or maple syrup
· 4 tbsp olive oil
· 3 garlic cloves, bashed but left whole
· 1 litre vegetable stock
· 200ml single cream, plus extra to serve
· Small handful dill, chopped
· 100g plain flour
· ½ tsp fine sea salt
· 2 tsp caraway seeds

Insert divider into oven. Heat top to 180°C Convection. Trim, peel and cut veg into 2cm chunks. Tip into bowl, drizzle honey and oil. Season, add garlic, mix well. Roast on baking tray 45-50 mins. Stir midway through until tender and lightly golden.

While veg roasts, mix crispbread ingredients with 75ml warm water in a bowl until thick with no lumps. Spread thin layer over parchment lined tray. Set bottom oven to 220°C Conventional. Bake 12-15 mins until golden, crisp and brittle. Cool on wire rack.

Squeeze roasted garlic cloves from their skins into large pan, then scrape in all the roasted veg. Pour vegetable stock over roasted veg and bring to a simmer over medium heat. Remove from heat and blend with a hand blender or food processor until smooth.

Stir in the single cream and warm through, adding a splash more water if needed. Season again, then ladle into bowls. Drizzle over a little more cream, then sprinkle over some chopped dill.

Remove the cooled crispbread from the wire rack. Break into pieces by hand. Medium to large pieces can be used for dipping, while small or crushed pieces can be sprinkled on the soup.

Serve the soup hot with the crispbread on the side. Crack some fresh black pepper to taste and enjoy.

Tip

Use soy or oat cream and maple syrup to make this vegan.
