The Galaxy Watch Ultra offers up to 100 hours of battery life when in Power saving mode, up to 48 hours in Exercise power saving mode, and up to 60 hours of battery life without Power Saving mode. This is based on typical usage so results may vary. There are several reasons why your Galaxy Watch may be experiencing battery drain or have decreased battery life. For instance, certain apps can increase battery consumption. Please take a moment to review, "Reduced battery life on your Samsung smart watch" when you have the available time to learn about how you can increase your watch battery life. Also check out, "Clear the app cache and data on your Galaxy phone or tablet" and "Use Samsung Health sleep monitoring on your Galaxy Watch" to help resolve what you have described to be experiencing with your health tracking features.
