            Chocolate chia pudding with smashed raspberries

            Looking for a quick and simple dessert, also really good for breakfast?

            This one is a favourite of Karen, also known as Secret Squirrel. Here’s the recipe for a delicious chocolate chia seeds pudding with smashed raspberries:

            Ingredients:

            Shredded coconut
            1 punnet raspberries
            4 tbsp chia seeds
            1 cup light coconut milk
            3 tbps raw cocoa power
            1 tbsp maple syrup
            Mint

            Step by step:

            Mix together in a bowl the coconut milk, raw cocoa power, chia seeds and maple syrup

            Let the mixture sit in the refrigerator for 3 hours

            In the meantime, smash the raspberries in a bowl

            Put the raspberries on top of the chia pudding

            Add shredded coconut and mint leaves on top
