When your leftovers seem to go bad after one day, or ice cream is only good the first time you open the carton, it's a clear indication that the refrigerator and freezer temperature needs to be adjusted. To help keep your food fresh, make sure you have the right temperature settings applied. This will help ensure your late night ice cream craving is met with maximum flavor and texture.

Note: The provided information refers to refrigerators sold in Canada. The available settings and options may differ for appliances sold in other countries.

Health Canada recommends that refrigerated food should be kept below 4 °C (40 °F) and frozen food below -18 °C (0 °F). The only reason to set temperatures higher is to save energy when you're not storing food in the refrigerator.

On most models, the ideal temperature setting for the refrigerator is 3 °C (38 °F). For the freezer, the ideal temperature is -19 °C (-2 °F). Some models may have different recommendations in the user manual or on the control panel. As long as the fridge is under 4 °C (40 °F) and the freezer is at -18 °C (0 °F) or less, you will keep food fresh.

Note: Some models display the temperature using bars. On these models, three lit bars is the recommended setting for both compartments.

On Family Hub fridges, the temperature can be adjusted using the Fridge Manager app. On other models with a touch screen, change the temperature in the menu.

To adjust the temperature on a model without a touch screen, touch Fridge or Freezer repeatedly until you reach the desired setting. On most models this will adjust the temperature down one degree (or temperature bar) each time. After it reaches the lowest setting it will cycle around to the highest.

Note: Note: A few seconds after setting the temperature, the displayed temperature will return to the current interior temperature. It can take up to 4 hours for the display to change to the temperature you have set and up to 28 hours for the refrigerator to actually achieve that temperature, if the doors are not opened.

Checking your refrigerator's temperature can be tricky due to its complex cooling system. The displayed temperature represents an average, taking time to adjust after settings are changed (up to 4 hours) and fully stabilize (up to 28 hours if the doors remain closed).

Temperature inside varies; it's colder at the back and bottom, warmer near the door. To get an accurate reading, place a thermometer in a glass of water in the fridge's center or among frozen items in the freezer. Allow up to 8 hours for precise results, minimizing door openings.

Note: If your refrigerator is warmer than 4 °C (40 °F) or your freezer is warmer than -18 °C (0 °F), adjust your temperatures lower and wait 28 hours to check the temperature again.

Achieving the perfect ice cream texture depends on its fat and sugar content. For firmer ice cream, lower the freezer temperature slightly. To soften it, aim for a temperature not below -18°C (0°F).

Two simple tricks ensure your ice cream stays fresh and creamy. Firstly, avoid storing it near the freezer door, where frequent warm air exposure can degrade its texture. Secondly, seal the container with plastic wrap before closing the lid to prevent freezer burn.
