How about scrumptious Carrot Muffins with Orange Glaze?

The festive season is upon us and with it comes all those holiday visits from our relatives and friends. Having food to share at this time of year is key, but sometimes there just isn’t enough time to prepare.

When you need something easy to whip up, try these delicious Carrot Muffins with Orange Glaze. They take only 10 minutes to prepare and with Samsung’s wide range of microwave ovens take only 30 minutes to bake. They’re a tasty snack for the whole family to enjoy and will be a hit with those visiting relatives and friends.

The ingredients

Carrot cupcakes at this time of year tend to feature wintery spices, but this recipe is light and bright with the citrus zest of orange and nutty goodness of hazelnuts. They’re full of flavour and thanks to the ingredients are a little nutritious too.
For the carrot muffin dough, you’ll need 100g carrots, 100g icing sugar, 100g flour, 125g butter, 75g grated hazelnuts, 2 eggs, 1 tsp vanilla extract and 2 tsp baking powder.

For the orange glaze, you’ll need 60g icing sugar and 2 tablespoons squeezed, fresh orange juice.

Step 1: Grate the carrots

Wash the 100g of carrots thoroughly, peel the skin and grate them into a bowl. Set the bowl aside.

Step 2: Mix the dough

Add the 100g of icing sugar and 75g of grated hazelnuts to the carrot bowl, stir gently to create a consistent mixture and create a small well in the middle. Melt the 125g of butter and pour it into the bowl along with the two eggs and beat thoroughly.

Using a sieve, add the 100g of flour, 1 tsp vanilla extract and 2 tsp baking powder then mix until the dough is smooth and elastic.

Step 3: Prepare the silicone muffin tray

Using baking paper, grease the silicone muffin moulds lightly with butter. This will make sure the warm muffins can be easily pulled out after baking. Then, spoon the muffin dough into the muffin tray, filling each mould just shy of the top.

Step 4: Bake in the microwave

Now it’s time to bake the muffins for about 30 minutes in your microwave. We recommend using the Easy View Microwave Oven.

Step 5: Prepare the orange glaze

While the muffins are in the microwave, use this time to prepare the orange glaze. Squeeze half a fresh orange and mix 2 tablespoons of its juice with 60g of icing sugar in a small bowl until it dissolves completely.

Step 6: Serve the muffins warm

Once the muffins have finished let them cool on the kitchen bench for about 10 minutes. Spread the orange glaze over them with a knife and serve as a deliciously scrumptious festive treat. Bon appétit.
